I always love giving my personal twist to everyday dishes by blending flavors from different cuisines, and that’s exactly how Idli Shakshuka was born. I have experimented with several South and North Indian recipes, but this fusion instantly became one of our favorites at home. Presentation is key for me, so always make sure to garnish it well with fresh curry leaves—it truly elevates the dish. While I am excited to try more fusion recipes in the future, this one has been my recent go-to because it breaks the monotony of regular idli dishes like idli-sambhar or masala idli. What makes this recipe so special is that it comes together quickly without any fancy ingredients—first the flavorful tomato masala is prepared, and then the idli batter is poured directly into it and steamed to perfection, all in one pan.

Firstly, in this post, I have poured the idli batter directly onto the prepared tomato masala, but you can also experiment with small idli moulds if you prefer bite-sized portions. For a fun twist, try using different veggie add-ins like carrot or corn to enhance both flavor and texture. Secondly, make sure to garnish it well with fresh curry leaves to give the dish a bright, fresh look. Thirdly, this recipe is a complete meal on its own, but if you like, you can serve it with a side of coconut chutney or even a mild raita for contrast. Lastly, these idlis can be stored in the fridge for a day—just steam them briefly or warm them in a covered pan to bring back the freshness before serving.

How To Make Idli Shakshuka With Step By Step Photo
- Firstly, in a bowl add ½ cup suji, 2 tbsp curd, ½ tsp salt and 3 tbsp water.

2. Mix well and keep aside to rest for 10 minutes.

3. Take a mixer jar and add 2 roughly chopped tomatoes, 3 garlic cloves, and 100 grams of paneer.

4. Blend it to form a smooth paste.

5. Heat 1 tbsp oil in a pan and add 1 chopped onion.

6. Cook for 1 minute by keeping the flame at medium.

7. Add ½ chopped capsicum and keep stirring for 1-2 minutes.

8. Further add 2 chopped tomatoes and keep stirring continously.

9. Also add ½ tsp salt, ½ tsp red chilli powder, and mix well.

10. Cover and let it cook for 2-3 minutes.

11. After 2-3 minutes, mash the tomatoes properly.

12. Now add the smooth paste and mix everything well. Cook this for 1 minute.

13. Add 2 tbsp water and mix. Cover and let it cook for 4-5 minutes more.

14. After 10 minutes, add 3-4 tbsp water to the suji batter and mix properly.

15. Further, add ½ tsp ENO and 3 tbsp water. Mix gently to set the consistency of the mixture.

16. After 4-5 minutes, pour the idli batter in 3-4 sections by keeping the space in between. Cover and let it cook for 4-5 minutes at low flame.

17. After 4-5 minutes, idlis are perfectly cooked.

18. Now, for tadka, add 1 tbsp oil and 1 tsp mustard seeds. Stir well by keeping the flame at medium.

19. Also, add 8-10 curry leaves and turn off the flame.

20. Further, pour the prepared tadka over the idlis.

21. Finally, enjoy idli shakshuka with coconut chutney.

- 8-10 curry leaves
For Shakshuka
- 1 tbsp oil
- 1 onion finely chopped
- ½ capsicum finely chopped
- 2 tomatoes finely chopped
- ½ tsp salt
- ½ tsp red chilli powder
- 2 tbsp water
