  • cup water
  • 2 tbsp oil
  • 3 tsp garlic chopped
  • 15-20 curry leaves
  • 1 tsp soya sauce
  • tsp salt
  • ¼ tsp black pepper

Instructions

  • Firstly, in a large pan, add 1 cup washed rice and 1½ cup water. Cover and let it boil at high flame.
  • As it starts boiling, turn the flame to low. Cover and cook for 10-12 minutes.
  • After 10-12 minutes, the water is completely absorbed, and the rice is perfectly cooked.
  • Cover and keep them in the steam for 5 minutes.
  • Set a kadhai, heat 1 tbsp oil, and add 3 tsp chopped garlic. Cook for 2 minutes at medium flame.
  • Keep stirring as the color slightly changes. Turn the flame to low and stir until it turns golden brown.
  • As the garlic is roasted completely, transfer it to a bowl, and keep it aside.
  • In the same kadhai, add 1 tbsp oil, 15-20 curry leaves, boiled rice, and stir well at low flame.
  • Add 1 tsp soya sauce, ⅓ tsp salt, ¼ tsp black pepper, and mix everything well.
  • Add half of the roasted garlic and give it a good mix. After it is perfectly cooked, turn off the flame.
  • Transfer the rice to a bowl and press gently to remove the extra space.
  • Cover it with the sering plate and flip it. Remove the bowl and garnish it with the remaining roasted garlic.
  • Finally, enjoy delicious burnt garlic fried rice.
