Firstly, take 1 Alphonso mango, cut it in half from both sides, and collect all the pulp.
Transfer it to the mixer jar and blend it. After blending, the mango puree is ready and keep aside.
Take ½ fresh peeled coconut and grate it.
Heat 1 tbsp desi ghee in a pan and add grated coconut. Cook for 1-2 minutes on medium flame.
Don’t change its color and keep stirring continuously.
Add ½ cup jaggery and cook for 2-3 minutes. Keep stirring to avoid burning.
Mash the jaggery pieces properly, and the color will slightly change.
Add ½ prepared mango puree, ½ tsp cardamom powder, and combine well.
Cook for 2-3 minutes or until everything comes together.
Stuffing is ready, and keep it aside.
Heat ½ cup water in a pan and add another ½ cup mango puree. Cook for 1 minute at medium flame.
Add 1 cup rice flour and mix everything well. Cook for 1-2 minutes and make it lump-free.
Turn off the flame. Cover and let it rest for 10 minutes.
After 10 minutes, transfer it to a plate and knead for 4-5 minutes by applying oil to form a dough.
Take a small portion of the dough and start pressing it on all the sides of the modak mould.
Add the prepared stuffing and cover the bottom with the dough. Shape it nicely and similarly prepare the others.
Heat water in a pan for steaming, place the steaming plate, and grease it.
Place the modaks over it and garnish it with saffron strands.
Cover and steam for 10 minutes on medium flame.
Finally, enjoy delicious mango modaks.
