Firstly, take a bowl, add 1 cup poha and some water. Wash it properly 2-3 times, and drain the extra water.
Let it rest for 5 minutes. Then mash it properly, add ½ cup sooji, ½ cup curd, and combine well.
Add a little water if needed and mix well. Cover and let it rest for 10 minutes.
After 10 minutes, add ½ tsp salt, 2 tbsp fresh coriander, and mix well. Knead well to form a soft dough.
Take small portions of the dough, make small balls, and press gently from the centre.
Heat some water in a steamer. Place a steaming plate over it and grease it.
Set the prepared bites on it. Cover and steam for 10 minutes at high flame.
After 10 minutes, they are perfectly steamed. Turn off the flame, keep them aside, and let them cool.
Set a kadhai, heat 1 tbsp oil, add 1 tsp jeera, 1 tsp mustard seeds, ¼ tsp hing, and 1 tsp white sesame seeds.
Keeping the flame low, add 10 curry leaves, ½ tsp salt, ½ tsp red chilli powder, and 1 tsp sambhar masala.
Stir well for 1 minute. Add 1 tbsp fresh coriander, steamed bites, and toss everything well.
As the bites are well coated with the masala, turn off the flame.
Finally, enjoy sooji poha bites with onion tomato chutney.
