Firstly, take a bowl and place a sieve on it. Put a muslin cloth over it.
Pour 1 cup of curd and put some weight over it till all the extra water is drained out.
Heat some water in a pan and place a steaming plate.
Take 1 sweet potato and cut it in half from the centre. Place it on the plate with 2 potatoes.
Cover and steam for 10 minutes at high flame.
After 10 minutes, check the potatoes using a knife and turn the flame off.
Remove the outer covering and cut them into small pieces.
Heat 1 tbsp desi ghee in a pan and add chopped potatoes. Cook for 7-8 minutes at high flame.
Roast well from each side until crispy, and keep stirring continuously to avoid burning.
Color is slightly changed and perfectly roasted. Turn off the flame and keep it aside.
Take a mixer jar. Add 3 tbsp coriander, 2 green chilli, 1 inch ginger, and ½ cup roasted peanuts.
Squeeze half a lemon, add ¼ tsp salt, 1 tsp curd, and blend everything well.
After a few hours, the hung curd is ready. Transfer it to a bowl and add the prepared chutney.
Give it a good mix. Add 3 tsp of it to a serving plate and spread it nicely.
Place roasted potatoes. Spread 2 tsp imli chutney and garnish it with coriander and pomegranate.
