Firstly, add 1 cup maida, ½ tsp salt, and 1 tbsp oil to a bowl and mix well.
Now add 4-5 tbsp water and knead well to form a soft dough.
Cover and let it rest for 10 minutes.
Heat 1 tbsp oil in a pan & add 1 tsp chopped garlic and 1 tsp grated ginger. Keeping the flame at medium, cook for 1 minute.
Add ½ chopped capsicum and mix.
Also, add 1 cup chopped carrot, 1 cup chopped cauliflower, and mix everything well. Keep stirring continuously and cook for 2-3 minutes.
Further, add ½ tsp salt, ½ tsp black pepper, and give it a good mix. Cook for 2-3 minutes on a low flame.
Turn off the flame and keep aside.
After 10 minutes, knead the dough again without adding any extra water.
Now, take a small portion of the dough and prepare small-sized balls.
Take 1 ball, make it flat using a rolling pin, and add prepared filling.
Give it the shape of a momo, and similarly prepare the others for steaming.
Heat water in a pan and place the steaming plate over it.
Place the first half of the momos to steam. Grease the base to prevent them from sticking.
Steam for 5-7 minutes until the momos are well-cooked. Similarly, steam the second half and transfer them to a plate.
Further sprinkle peri peri masala and chopped coriander over it.
Finally, enjoy veg momos with schezwan sauce.
